Polenta ‘Bruschetta’

This uses three previous recipes which you can find on this site.  Together, this makes for a delicious lunch!

Three or four discs of polenta

Pesto

1 tomato

5/6 sun dried tomatoes

1 tablespoon of balsamic onions

A teaspoon of chilli and garlic oil

Put the chilli/garlic oil in a pan, and fry the polenta until crispy.  Put a dollop of pesto on each one.  Chop the tomato, sun dried tomatoes and onions and spoon on to the top of each one.  If I’d had some to hand I would have added some torn basil generously on the top of each one.
